Small but scrappy, Aku are speedy little tunas often found schooling near the surface. While they’re not as fatty as their Yellowfin cousins, they’re a staple in Hawaii’s fishing scene and often used as bait to lure in larger pelagic fish. Their meat is leaner and darker, great grilled or in stews.
